Established since 1793, Sylvain, with his wife, continues the family tradition. Côte Chalonnaise is a lot more pure farming compared to the monied Côte d’Or, & a favourite of royalty like King Henry IV. Sylvain farms 8 hectares using traditional hands-on methods. Hand-harvested & 100% destemmed with spontaneous fermentation & maceration for 11 to 13 days, then racked into barrels for 11 months. Smooth strawberry & blackberry flavours. Delightful.
